Not directed at you, but...
My fiancee decided to do a paleo "reset" for lent. Tonight we decided to do some jalapeño pork sausage with stone ground mustard, and for the side we made garlic and cauliflower mashed "no"tatoes... FLIPPIN' DELICIOUS!!! We also have a paleo chuck roast in the slow cooker right now with some carrots, celery, and mushrooms.
I did a "whole-30" for the month of January and lost 23 pounds, and haven't felt (or looked) this good since I moved back to BR. I found through that experience that once you get in the routine of cooking mass quantities for the week, the rest is easy. I like having the availability of food to "grab and go"... I enjoyed the results so much that I allowed myself a "beer holiday" for a couple weekends, and am now back on the diet full force.

I'm doing paleo for Lent as well. Its been going fine, but I love experimenting with new ingredients.
Im gonna make almond flour/coconut flour/almond milk pancakes tomorrow, it should be interesting.
One thing I had trouble with today was the squash pasta. It was way too wet. How do you people make yours? I just julienned the squash and let it sit then sauteed. is salt ok on paleo?

Is kosher salt ok, or do I use sea salt?

I used a spaghetti squash recipe in this thread to make cheesy garlic "pasta" and in the comments people kept talking about their squash being too watery, how on earth? When I baked mine, it was drying out and still a bit crunchy.
To the person that mentioned adding additional sweeteners to a sweet potato, good lord. Aren't they sweet enough. Their sweetness is the main reason I can't stand sweet potatoes and I really want to like them!

I made a killer sauce last night. Blended up half a can of chipotles, a chunk of pineapple, two cans of coconut milk, lime juice, and a bunch of cilantro.
Heated some pulled pork loin I'd cooked in the crockpot Sunday in a pan and added the sauce. Smoky, spicy heaven.

I made a coconut "bread" - six eggs, three cups coconut (blend to flour in food processor if you have one), 3 tbsp honey, 1 tsp baking powder and 1 tsp vanilla. Bake at 284 for about 40 minutes or until fork comes out clean in the middle.
I nuked that in the microwave this morning and seared some blueberries in a skillet. Had some sausage on the side. Best breakfast I've had since before lent!
One thing so far that has helped is I went to the store last night and stocked up for the week. Fresh fruits/veggies and so on. Planning to try this cauliflower pizza bake sometime this week too.

I had a friend who made the pizza crust with cauliflower and apparently it was a success. Might have to try it this weekend.

I made a single large pancake from almond flour, coconut flour, 3 eggs, tsp vanilla, 1/2 cup almond milk, .5 tsp baking soda.
Drizzled it with honey.
It was pretty dry, but tasted alright. It needed fruit which I didn't have on hand like blueberries.

Next time you want pancakes, try one ripe banana, one egg and some blueberries. Hard to flip, but don't even need syrup and naturally sweet.

I want to make a paleo-friendly pizza soon. It's expensive though, almond flour.. $10 for a pound..

Make your own in a food processor or coffee grinder. I know it's cheaper, not sure how much cheaper though.
Also, here's another recipe that will give you some almond flour.
Soak 1 cup almonds overnight (or 4-6 hrs). Blend almonds and 3 cups water for 3-5 minutes. *add extras here.
Pour almond milk through cheese cloth and squeeze out remaining liquid. Save almond pulp for future use. You can use immediately, or dry it out on low temperature in the oven then store and freeze.
*you can enjoy the almond milk plain or add vanilla, agave nectar, honey, maple syrup, strawberries, etc. A pinch of salt is nice.

Spaghetti squash is very moist. You have to cook the squash first. Actually just took one out the oven. Gutted the insides with a fork and bagged some in the freezer for future meals. Chicken parm tomorrow over spaghetti squash

Introducing: Almond flour crust pizza
Crust ingredients:
2 cups almond meal
2 eggs
3 tbsp olive oil
¼ tsp baking soda
1 tsp garlic powder
1 ½ tbsp fresh rosemary chopped
-Preheat oven to 350
-Wisk all of the dry ingredients together:
-Then crack both eggs into the mixture and drop the olive oil in. Mix very well until very, very thick. The dough won't actually wind up like pizza dough, it should look like a really, REALLY thick hummus:
*VERY IMPORTANT: Grease the bottom of the baking dish with olive oil (or PAM) and grease up your hands with olive oil before proceeding, or the dough will stick to your hands pretty terribly.
-Ball up the dough and place it in the center of your baking dish, and spread it out evenly. The crust should be really thin. I don't have a round pizza pan, so I just used what I have. As you spread out the dough, it should get more "doughy", and easier to spread:
-Place dough in the oven for 20 minutes at 350.
-While dough is cooking in the oven, work on your toppings. My toppings are going to be a fresh cut roma tomato, a fresh cut jalapeno, and italian sausage. Here I have the sausage cooking (with a lot of cajun seasoning mix.. I'm too lazy to cut all of that crap up . It cooked down more where it wasn't so much more seasoning than meat:
-Once the dough has cooked for 20 minutes, take it out of the oven and place all of your toppings:
-Place back in the oven at 350 for 30 minutes.
-Enjoy a completely non-paleo, non-low carb, terrible for you, but delicious beer:
-Take the pizza out, cut it, and eat it.

I've already said I don't exclude cheese. And yes I clearly stated "non paleo, non low carb, and terrible for you but delicious beer".
Obviously skip the beer, and if you want to go hardcore paleo skip the cheese.

Just kidding man, it looks great! I am, however, trying to go paleo for lent, and that damn beer is killing me. That may be the hardest part of the whole paleo diet. I have had to give up beer, diet coke, and breads, pastas, and all the fun food there out there, but thank God for BACON.
