Do you have access to haricort verte(Wally world carries portioned bags in the produce section)? A very nice and easy veggie that is very utile with many forms of protien, just blanche, drain, saute with almond slivers, S&P(white if you have it). Two other simple sides in terms of not being labor/time intensive are honey and butter glazed carrots and boiled potatoes with butter and chopped parsley. Sometimes simple is a blissful thing to do, and all of those above would do well with the Tuna.

What about baby bok choy?

They have a store nearby with this stuff. Any idea on how to prepare that?
