I think 15-20 hours is reasonable. 30 hours is too much though.
You have to remember some characters will be further ahead of others--Bran, Sansa, even Dany will be done after season 5, which makes me think that George is trying to wrap up TWoW so the show doesn't pass him up. And some fans will say "but there's 2-3 seasons more of material"--for characters like Jon, Stannis, and Reek, 2 seasons of material for sure but 3 is pushing it. But at the same time other arcs are starting to run out of material with less than 1 season. Martin wouldn't be outpaced with every character but he definitely would be with several of them.

I think that Winds of Winter will be on in 2015. No reason, other than just a hunch. So, yes, I think the show will likely go into season 7 still sl. behind/with the books. Now, I would guess that the show will wrap in season 8 likely without the last book out, but I guess GRRM could surprise us all by having that one out about the same time. I doubt it, especially, if he is already talking about an 8th book.

I have to say that the Mercy chapter that was released would probably make my top 10 in the series. It's hard to get that level of suspense to start a chapter off and continue it throughout the chapter.

That's pretty much the rub. We've already gotten into some aDwD material with some characters.
Now they could very well balance that out with expanding some characters (i.e. The Hound off-the-page journey to become The Gravedigger would be a good one). So it's possible they stretch it for two seasons. I definitely don't think they get everyone caught up to speed in one season, but as you said could very well surpass the storylines of some of the characters.

In Dorne:
"Horseman"
- The show is seeking an actor to play a thirty-something Dornish man described as confident, fierce and charismatic and most notably, skilled with riding horses. They’ll have fight scenes that take place entirely on horseback. The character interacts with the main cast in an important sequence, and is considered someone you wouldn't want to tangle with. The actor is only needed for a week’s worth of filming.
In Essos:
"Son"
- The show is casting for a young man to play a captured vigilante, referred to as a “Son.”
"Unnamed Fighter"
- A young Unsullied fighter who likes to spend time at Meereenese brothels, enjoying the affections of the women in his own way.
"Ship's Captain"
- We’ll be seeing a ship’s captain in two episodes next season, working with a main cast member. The role is quite small but the captain is carrying an important passenger.
Unknown Region:
"Elderly Serving Woman"
- Brienne will encounter an elderly serving woman who becomes her ally in dangerous territory. The character will appear in a few episodes, though the role is small.
"Man in his fifties"
- Required to be thin and have a long, thin face, to play a character with financial cunning and steeliness. The character has several scenes over two episodes.

Horseman- Ser Gerold Dayne aka Darkstar
Ships Captain- Quhuru Mo. Capt of Cinnamon Wind that transports Sam, Aemon and Gilly
Elderly Woman- Maggy the Frog
Son- Son of the Harpy
Unsullied- Stalwart Shield
Man in Fifties- Iron Banker that negotiates with Jon Snow? Could also be the insurance salesman that is Arya's first kill as a faceless assassin

I could've swore I read somewhere awhile back that they had already cast here or held casting for her.
ETA: It looks like Maggy will only be in one episode. So I don't believe it's the same casting.

I'm glad we're finally getting a flashback/dream outside of Bran. Should have done it already with the Tower of Joy and Jaime's dream of being stuck under Casterly Rock.

Is this going to be simply to provide the valonqar flashback? Think they mention Summerhall or provide any insight into anything else like future events?
I guess it gives some partial background on why Cersei hates Tyrion so much.
