Bull red fishing - tips?

My cousins want to go bull red fishing next Saturday. Looks like a hard falling tide from mid morning on at wine island pass. What tips/tricks can you share to hook on to some big'ens?

I use cracked crab for bait. Carolina rig with a circle hook, heave it out there and let it sit.

Crab with the pinchers and points cut off or cut mullet. Where are you going?
