Not sure if it was actually called burrito, but they have had something that was what we call a burrito for well over 100 years.

A burrito is a taco with the ends tucked in. Im not sure what makes an enchilada. I've seen em rolled or stacked. Baked or fried. I don't know. Pintos in the North, black beans in the South.

enchiladas are my favorite. i grew up down by the border. nothing like some authentic mexican cooking.

i've never come across a flour enchilada. besides, they taste just right in corn. you can use different sauces as well.

I like Enchiladas Suizas with a little bit of queso fresca on top

Also, carne asada with whole roasted jalapenos makes for a happy TigerstuckinMS.

Living in San Diego you get the best of both worlds. Queso Fundido with Chorizo and Carne Asada fries are my faves.

I just thought of four things that I look for when I'm trying to spot good Mexican food.
Lengua.
Chicharrones.
Cabrito.
Mexican laborers.
If you find those four things when you walk into a Mexican restaurant for lunch, you've probably got some authenticity coming your way. You just need to get out of your comfort zone and try something off the menu that you don't recognize. Menudo is a good example.

most mexicans are fat because their cuisine is mostly heavy with lots of carbs. I have two very good friends who are hispanic and they both said growing up they ate rice, beans, tortillas at every meal with a main dish. they also are the worlds largest consumer of soft drinks.

I've never been to a Mexican restaurant that didn't have these. Ate at one in Laffy the other day and the guy barely spoke English. Food was horrible.
Is there a law that says every Mexican restaurant has to play that horrible Mexican music?
