CFS Gravy

Dauber and I were having lunch at the Southside Cafe. Of course, I ordered the CFS. This sparked an animated discussion about white gravy vs. brown gravy.

What says the F&D Board?

I grew up with brown. Didn't see white until I was about 30. Both are good when seasoned well..I prefer brown.

I will say the Southside Cafe in Slidell, LA has quite possibly the best Chicken Fried Steak (CFS) in the State. While I do appreciate brown gravy with other beef dishes (hamburger steak, pot roast, etc.) I find that the delicate breading of the properly prepared CFS is best enjoyed with a blonde roux based white gravy, preferably made using cream and salted butter. Really, it should be a bechemel heavily seasoned with cracked black pepper and perhaps a smidge of red pepper and certainly salt to bring forth the flavors.

For CFS you must use white gravy. You are a communist if you put brown gravy on a good CFS.

agreed. Only dark thing on that gravy should be pepper..and if you got white, use that.

I pretty much agree with this statement. I wouldn't turn down CFS with brown gravy, but would always choose the gravy blanco.

White gravy on CFS and biscuits, brown gravy on everything else.

When I worked at Bob Evans, there were three types of gravy. Brown and white gravies for dinner entrees like chicken and meatloaf. And their famous sausage gravy which was thick and loaded with sausage for the biscuits. I had a redneck who got the sausage gravy on his CFS. Heart attack on a plate, but looked amazing.

Got to be white, although I had a CFS from Verti Mart two weeks ago that add a nacho cheese type sauce on it. Now that I think about it maybe it was chicken fried chicken. Who knows that late at night, but it was damn good.

Should you happen to have rendered pork fat to serve as the base for the white gravy, I would certainly recommend using it. Praise to the Lard!!!!

Got to be thick white gravy with plenty of fresh cracked black pepper just like mawmaw used to make. Makes me hungry just to think about her fried deer steak and gravy.

Parentons and Gulliory's both have lunch specials during the week with a good CFS. However no white gravy.
