Time to make up a Mediterranean burger recipe. Need some input.

Since asking the F&D board for help with my Asian burger went swimmingly well (I need to make a round of them for everyone to thank you for the input) I think that it's time for round two...some sort of Mediterranean burger.

I'm thinking a ground lamb burger. Seasonings: dried oregano? Trying to think of what other dried herbs/other randomness to throw in.

Topping is gonna be a sort of tomato salad. Quartered cherry tomatoes, basil chiffonade, shallot, balsamic and olive oil.

I'm still trying to figure cheese out. I really wanted to go with feta, but that would have to just be crumbled on top since it won't melt. Maybe just a creamy goat cheese instead?

What are y'all thinking?

Meat and Cheese is not Kosher.

Sheeps and goat are not in the same genus, so according to some more modern interpretations of the Kashrut it would be.

Not that I'm going to be buying Kosher anything, so it's really a moot point.

A little mint in the meat would prob work well.

I once had a Medi burger recipe that was in a pita with cucumber, feta and tzatziki. I did not like the pita, but enjoyed the flavor profile and did it the next time on a wheat bun.

I like the idea of the tomato salad. Maybe add diced cucumber there.

Good to know. The only reason I know that is I was watching a show about fast food oversea's and they were showing a Mc'D's in Israel.

Ground lamb.. excellent choice.

I would sautee some garlic in extra-vrigin olive oil and let cool, strain it out. Instead of cheese on top, I would perhaps incorporate some crumbled feta in the mixture of the meat along with the sauteed garlic, some oregano and lemon zest. A mint mayo and a grilled red onion on top the burger sounds really good.

Salad with tomatoes and cucumbers with a yogurt and lemon juice salad as a side sounds really good.

Find a recipe for kofta, and make a giant lamb kofta for a burger.


As for cheese...find something like Valbreso Feta, it will hold up pretty good to slicing without completely falling apart.

made some lamb burgers yesterday. Had about 1 lb of lamb with about a 1/4lb of pork. Added mint, sauteed onions, oregano, garlic, cracked pepper, salt, dill and some cayenne for a little heat. came out pretty damn good. Have to watch to not over cook them, i almost cooked mine too long. Went the pita route... made the taz sauce, sliced creole tomato and some good feta. I liked it. This is where those grill grates come in handy.

You should try a chevre/feta/mozarella mix for the cheese

This sounds legit on a burger. I would do that if it was me and add some feta to the burger mix.
