I only like red potatoes, sausage (from a good shop or Chalmation/Cajun friend), mushrooms, lemons, onions, 1/2 heads of garlic and frozen corn. I use the frozen corn to shock the boil and the corn doesn't get soggy. The garlic paste is great squeezed on the potatoes. I am not native LA, but this is how my neighbors learned me.

I don't eat crawfish but I went to a boil this weekend that had cabbage in it.
