This is the only correct answer. The first bite tastes like arse but once that vinegar shocks your tongue, there is nothing like it. I use tony's or straight cayenne instead of black but the vinegar is the important part.

You mean hot sauce? I season my crawfish when they boil. Drawn butter just adds fat. Which is delicious. I seldom do it, but that's what I'll dip my crawfish in...if anything.

I've had crawfish with:
1. equal parts melted butter and lemon juice
2. nothing
3. ketchup
4. ketchup and mayo
5. tartar sauce
IMO, 1 and 2 are the only good options of the above. 3-5 taste like garbage.

Seafood Cocktail Sauce:
1 bottle Hienz(or other brand) Chili Sauce
1 equal size bottle of catsup
2 T worcestershire sauce
3 T lemon juice
3 to 4 T horse radish (best if fresh)
1 T Tony's or hot sauce to taste
Mix it all and adjust the seasonings to taste. You can add two T of minced celery for texture and taste. Great with the potatoes or shrimp. Much better than a plain catsup based sauce.
Other option:
4 parts vinegar and 1 part of your favorite hot sauce. Mix and dip the tails in the vinegar sauce. Damn tasty and screw the haters.
