Don't know if it is best but the South Farm of Sherburne opens up in March for crawfish. You need a 4 wheeler for access to the flooded fields.

Not sure how close you are to Houma, but I normally start seeing a lot of people crawfishing in the bayou that runs along Highway 311 (near/in front of Ellendale Country Club) about this time of year.

I don't know if it's stil a good place to go or not but I went to Ramah as a kid. Caught tons of crawfish out there. That was also 15 years ago.

You can catch them behind the levee after the water comes up and goes back down.
