Another good one is Linda Ronstadt. She has been successful in pop, rock, country, Latin, blues, and "The great American songbook".

The Band can pull off all those genres. Levon has probably opened for a band/singer in all of those genres.
Led Zeppelin might be mentioned. They've covered everything but the hip/hop angle. JPJ could probably have come up with something and you know Mr. Plant could have sung it. His stuff with Allison Krauss was very good.

I might be biased considering they are my favorite band, but Queen is one of the more dynamic bands to come around in the last forty years. They experimented in rock, pop, disco, folk, and they even did a little country here and there with a few of their ballads.
