Best chili recipe you've got?

Thinking about cooking a giant pot for the Bama game. I've got a few recipes that I've used, but would like to compare to what others have had success with. Please post your best here.

Sorry but I have no recipe. Chili is a dish I cook by feel and taste. I like the texture of ground meat...venison,beef or both. I brown it to about 80% done, drain and then add several minced fresh peppers and finish. I like to use jalapenos,serranos, poblanos, and a habanero or two...a good mix. Then I'll add a mix of at least two chili powders and a little extra cuminI also like to use a little onion and garlic powder as opposed to the real stuff, though I'll do that,too. As a rule, no chunks of veggies and no tomato products in my chili.I've even added a bit of minced fresh cilantro because I like it..I always add some chocolate...a Hershey bar works fine. I'll add some beef stock and simmer a while...then salt to taste.In the last 30 minutes, I'll add some masa or corn meal to beef stock or water and make a slurry to bind the chili a bit. Reseason to taste and serve.

Texas 3 Alarm Chili
serves 6-8
2 lbs pork roast -- cut into 1" pieces
2 lbs cheap ground beef -- (You'll need the fat. This isn't health food.)
1/2 cup GOOD chile powder -- (Your local supermarket brand tastes like cardboard.)
1 HUGE onion -- roughly chopped
1 head garlic -- minced
8 New Mexican green chiles -- roasted, peeled, seeded, chopped.
1 Tbl hot Hungarian paprika -- (This is legal. Paprika is a chile.)
1 Tbl ground cumin
4 beef boullion cubes
1 28 oz can crushed tomatoes -- (Don't worry. You won't even know they are there.)
1 bottle amber Mexican beer -- (Dos Equiis, Noche Buena, or any Oktoberfest will do.)
1/4 cup bourbon -- (This is one of those things that just happened.)
2 squares bitter baker's chocolate -- (Not as weird as it sounds.)
salt to taste
Sautee 1/4 of the garlic and onions until translucent. Add 1/4 of the meat, chile powder and brown. Salt the meat while cooking. Put into your chili pot. Cast iron is best. Repeat until all the meat is done. Put the rest of the ingredients in you chili pot and simmer for for a hour. As in any recipe, the amount of ingredients is variable. Add more of anything you want, especially chiles.
You now have the power. Use it wisely. The eyes of Texas are upon you

I'm with tigerlee. I dont think i can do it better than 2 Alarm kit. Too easy and tastes too good for me to go exploring into the making chili from scratch world.

Otis sounds like he's got it down. Do not skimp on the spice....in my opinion needs to make your eyes water

Go to the TD recipe book and find Tavolatim's recipe, it's legit. The times I've done it, I've subbed the pork for beef cubes, which I prefer in chili, but otherwise, I pretty much stick to his recipe.

GM, what kind of chili powder did you use? Tim suggests a good one. What's a good one? I've used the Mexene and Gebhardt's in the grocery store. They're find, but I'm not up on the best chili powders.

The first time, I used some chili powder someone had gotten me. I think it was from Penzy's, and it was really good. This last time, I had some chili powder that my friend's wife's Messican mother had made, and I preferred this, even though it was spicier than I would have liked it. I'm trying to get the recipe for it and will share it if/when I do.

Chili chefs like to use it. In California they barbecue tri-tip instead of brisket and most of them have never even heard of pork steak.

Sounds like a delicious mix of peppers. Not something I've done before for chili. I've chopped fresh peppers for it, plenty of times, though.

You will use it for more than chili...rib rub, taco seasoning....anything you add chili powder to. With the food processor it takes a few min. and will make a jar full....and no salt...so you can control the salt in your recipe.
