I have some eye of round steak thin cuts I'm thawing out of supper. I have no clue what to do with them and how to cook them. Anyone have some good recipes to use with these?

Brown them, make a brown gravy, simmer. Mashed potatoes and peas. Done.

Sorry to say they aren't really made for thin cut steaks.
I love an eye of round roast, cooked medium rare and sliced thin but when you cook the already thin steaks they are very tough.
I would just say, cook very fast to medium rare and chew chew chew.
Now it you get a chance buy a half pound of pepper crusted eye of round sliced very thin from Whole Foods. Roll each slice into a cylinder and sprinkle sea salt on them. Get a good french baguette and a good white cheese like say Lambchopper. Then open a good bottle of red and enjoy the evening.
I know that isn't what you wanted to here but it's a great way to enjoy eye of round which goes wonderful with a nice Zinfandel or Cab.

Thanks. Your post made me remember why I don't come to this board anymore.
Why? You don't like wine? You don't like cheese? You don't like bread? You don't like meat?
You don't eat?
For what it's worth I had corn flakes for lunch.

Get a meat hammer and commence to whacking. Brown and put in a gravy.

You need to brown them with some onions, celery and bell peppers and slow simmer them in beef broth for an hour or more. When you're done, you'll have grillades. Make some grits to go with them.
