Get a pound of honey ham from wal mart and throw it in there for an hour. Seriously though, all the good stuff takes a long time.

ETA Salmon.

Need something that is difficult to mess-up, with temp variations because of Chips catching on fire etc

Yea and I understand that is what smoking is all about, but I am not looking for a 12 hour smoke time for my first rodeo. 2 to 3 hours no problem.

Skin on salmon. My grandpaw used to catch em in Oregon and smoke them down here. Tastes freakin awesome and not a terrible cook time.

i agree with this. i use chunks or logs. salmon is super easy. chicken is super easy. ribs are pretty easy too. all will take less than 4 hours.

We need more information. Gas or electric. Offset, vertical, or other.

I would do chicken or ribs. Or both. I prefer to smoke a whole chicken. And for my first time I would tackle baby back ribs.

I can and plan to use the chucks (Apple and Hickory) Thinking of trying chicken wings first? Looks like a few hour smoke time then on the pit to crisp up the skin. Any hints or suggestions?

My smoker is propane and vertical so you think ribs would be better to start than chicken wings?

Apple wood for chicken, hickory for ribs.

Do whatever you feel like. I just know when I think of smoking something, chicken wings is about 1 millionth on the list.

Chicken wings? Wow been smoking different stuff for years and there is an item I never had a want to smoke. You wouldnt end up with crispy wings they would be kinda messy. You would probably want to smoke until cooked to temp then drop in a fryer or over high heat to crisp them up.
