Dorignacs used to have some great shanks. Haven't been in years. Used to make it every few months. Now you got me hungry!

beef or pork shanks but it wont be as good.
Where are you? you can get veal shanks all over in BR.

I don't think so. It's relatively straightforward to make and doesn't require any advanced techniques or special equipment. You just have to pay attention and put the time in to make it correctly.

I'm in Shreveport-Bossier.
I know they are not in the grocery stores, even in the butcher sections.
However, I know the owner of Maxwell's on Line Ave and have his email address. I'll bet he could either get me some or tell me where to find it.

I would think, if you ask in the butcher section of almost any grocery store (even in S'port/Bossier), they should be able to get you some veal shanks.

Absolutely. My preference would be: risotto, polenta, mashed potatoes, in that order.

These are definately the best bed or sides for osso bucco. My favorite part is the marrow. It is like nectar for a carnivore.

To Powerman: The Steak Knife in Lakeview does a pretty solid version.

not sure where u can buy shanks to make it for yourself in shreve/bossier, but the osso bucco at L'Italiano is bossier is excellent. It's off menu, and they don't always have it, but when they do, it's can't miss.
L'Italiano was one of my favorite restaurants when i lived in the area.

I make osso about 4 times a year,get my veal shanks from Albertsons on order and serve it over wild mushroom risotto and man is it ever good,a treat
