I'd heard the chef left, but I just got around to reading this. What's the deal? The GM wants the chef to visit with the guests. I'd rather the chef prepare my food. The GM can visit if he feels someone must.

Does the chef coming to your table make or break your experience?

I think it's a nice touch, but it's not the end all be all if the food is good, in my opinion. I think the GM sounds ridiculous.

I heard from some people that it was more than that. The dining room presence was just the excuse they went public with. The owners and GMs had different outlooks/opinions than the chef and they were not able to work it out.

No, I don't want the GM or owner at my table either.

Whether this is the reason or not, I prefer to have no one at my table. In fact, I don't even want my waiter coming too often

I don't know what the deal is/was but I sure hope somebody gives Jimmy a job in New Orleans. He's got so much talent to let slip away. If I had it, I'd give him the start up money.

I'm with y'all. I don't need the chef coming out to talk to my table. If they come looking for feedback, that's fine but I'd rather the chef cooks.

If that's the case, he should have come up with a better excuse to give the public. Lost credibility with me.

I loved my meal there, but I'd hesitate to return until I find out who the chef is and how the food is. It's not a cheap place.

And I agree that I don't want the chef at my table.

Sounds like they needed a new GM and not a new chef, to me.

I agree and I'm going to keep an eye out for him. I want to try wherever he goes next.

Fwiw, I've heard from a few people that the food is still great. I read that the chefs in charge now are very capable. I'll give them the credit for fixing it but they don't get the credit for coming up with the dishes.

I ate lunch there 2 weeks ago and it was awesome. But that was my first time so I didn't get to try the chef's food. I am anxious to see where he ends up.

GG, I've been meaning to mention that I got a gift card to Le Foret for Christmas.

What should one do in this situation?

Go. The head chef has been gone for atleast a month. Who really cooks at restaurants?

When I'm at August, I definitely wonder...

Or anywhere for that matter. There a few places in town where the chef actually cooks instead of barking out orders. Gautreau's, Lilette and Coquette would be my guesses among the best in town.

Brock, it sounds like the chefs there now are preparing the same foods created by the former chef. I'd go soon before it changes in some way. Those guys learned a lot and they could very well leave, too.

The actual chef doesn't have to be the one cooking at all times. Obviously, the other chefs learn to prepare his recipes, but I don't know if they can "create" as the head chef can, in this case. Eventually, this is how many chefs become head chefs.

the chef doesn't cook on the line, but that hardly makes him unimportant
