Hash Brown Casserole

I cooked it tonight for my families Christmas Party...(everyone bring a dish). Here is what it looked like:



I added more cheese (not much), bacon, and green onions on the top...plus I used potato chips and not corn flakes.

Here is what it ended up looking like:



It was the perfect "office party, pot-luck, family function dish."

It's really, really good! (NOT GOOD FOR YOU)

There is a very similar recipe in the Cajun Men Cook cookbook (calls for crushed Rice Krispies instead of Corn Flakes and other minor variations).

You are correct that is it tastes great and is a great crowd pleaser.

I love that it's so cheap and easy to make. Definitely one of my "go-to" dishes for a potluck party.

I cooked this for the first time for a church function this morning. I put everything together last night and cooked this AM. Took longer to cook, but other than that, it was amazing. Followed the recipe, except I added a can of diced green chilis and sausage. EVERY bit of it was eaten. PS I tripled the recipe and it was not a bit left.
