Suggestions for preparing it. I've always fixed it up simple with a saffron broth and some veggies mixed in. Just curious if anyone else has a good recipe for it out there.

Ingredients:
1 cup basmati rice
1 shallot chopped
1 green onion chopped
1 tbsp butter
1 tbsp sesame seed oil
1 tsp sesame seeds
1 cup chicken broth
1 cup coconut water (note - not coconut milk)
Heat over to 375. Need a skillet that is capable of going in oven. Melt butter in skillet over med high heat. Cook shallots for 3 min. Add rice and sesame oil and stir constantly for 3 min. Then add stock, water, seeds and green onion. Stir once and let mixture come to a low boil. Place in over for 18-20 mins.
Comes out great. Can also go another step and take the cooked rice from above, add egg white to it and form into patties. Dredge patties in bread crumbs. Put 2 -3 tbsp olive oil in skillet on med high heat. Cook patties on both sides till crisped - about 3 mins per side. Usually do this with any leftovers.

Chicken stock and Madras curry powder are always a good choice.
ETA: Slivered almonds, golden raisins and frozen green peas are a great addition to the curry powder and stock suggestion.

I've got a cilantro/lime dish recipe somewhere. I'll look for it.
