Egg sandwiches

What's your favorite way to make them???
Right now I'm really digging the following:
2 scrambled eggs + laughing cow Swiss cheese
Avocado
Sriracha sauce
Bread

My current favorite:
One egg in a hot non-stick skillet with spray. Sprinkle egg with garlic, pepper and Tony's. Flip and repeat. This will create a "blackened" crust on the egg but it will still be runny.
Serve on whole wheat toast with a slice of melted swiss or American, thin slice of ham, and mayhaw jelly. If you use lowfat cheese and ham, it's pretty low cal but definitely not low sodium.

Eggs are my favorite food by far. Pablo, if you get down to NO you have to go to Tartine. In house baked brioche hollowed out. Two eggs cracked inside and about a 1/4 cup of put inside. Baked for about eight minutes and topped with French gruyere cheese. Baked for five more minutes and served with a medley of the freshest organic fruit they can find.
Eggs poached in organic cream is beyond belief.

Try the brioche baked eggs. They really are great. It is like a small pocket of France in NO.

Garlic aioli or nothing. I really only get fries at places like La Boca or Boucherie, where nothing is the best option.

One fried egg, then melted pepper jack, then another fried egg with cayenne and black pepper, topped with some crispy bacon on toasted wheat.
I'm also reminded of the Man vs. Food where he ate this....thing:
instead of buns the top "bun" was an entire grilled cheese sandwich, same for the bottom.
in between was a 1/2 lb burger patty, 3 fried eggs, 6 slices of bacon, and 4 slices of cheese.
My friend and I were watching it, and being as baked as we were, went to the store, bought the stuff, and made some...deep regrets were soon to follow, I felt like I had instantly clogged every artery in my body. But it was awesome.
I'm also reminded of the Man vs. Food where he ate this....thing:

Pretty simple actually:
White bread, toasted
2 slices of melted Sharp Cheddar (although I switch out cheeses depending on what I have)
Ham
Fried egg with tonys sprinkled on top
Butter on the slice of bread without cheese

Mine is easy. Two slices of bread, fried egg, two slices of cheese, and a little mayo. Contrary to some on this board, sometimes the simple things are the best...

I assume they have egg sandwiches?
I could eat a breakfast-like sandwich every day if it wouldn't make me fatter than a hippo. Butter and cheese and eggs and ham... mmmmm.
Like I've said before, Croque Monsieur is my favorite sandwich. I actually had one yesterday :)

Well, white bread, an egg, sliced cheese, and mayo are hard to mess up... Some people on this board would probably say that you would have to have all of those imported to have a decent sandwich

LOVE eggs and I'm a HUGE fan of egg sandwiches.
buttered sourdough that has been browned in the pan. fried egg w/ melted sharp cheddar. delicious.
