Pickling Peppers

I've got some fresh cayenne, banana, and jalapeno peppers I'd like to pickle.

Anyone know how I go about doing this?

I've done 3 batches so far banana peppers and bellpeppers.

one was a sweet pickle, one bread and butter pickle.

have the recipe I used at home..

really pretty easy if you have done any canning before..
Biggest thing is how long you boil the peppers before adding the pickling..

3 minutes was not enough, 5 was to much.

I have the recipe I used at the house, I will post later if you like.

I cut my peppers in rings, stuff them in the jars with a little garlic and salt, and fill the jars w/ equal parts boiling water and white vinegar. Then go about the normal canning process. Turns out good with bannans and jalapenos.

That would be great. It's the broke part of the month, so I'll be spending my Friday night pickling.

For a jar of tabasco peppers I did:
clove of garlic
tablespoon onions
cover with boiling white vinegar & salt

A case of Ball jars has canning directions and this website has lots of good info.

This is lazy, but, works well. I put up a bunch of dill pickles from cukes every year and use the walmarks pre packaged dill pickle stuff.. Makes a great pickle and works on peppers as well..

Don't know if it would work on peppers but I have a great bread & butter pickle recipe from my grandmother.

it works on peppers just fine,

I like bread and butter bellpepper strips with Onions.

Also sliced mirliton makes increadable bread and butter pickles

That is what this recipe is. I made 18 jars so far

3qts Cucumbers sliced thin
3 med Onions
3-3/4 cups Sugar
3-3/4 cups Apple Cider Vinegar
1-1/8 tsp Tumeric
1 Tbl spn Pickling Spice
3/4 tsp Whole Mustard Seed

Pretty close to what I did, think I added celery seed and a few cloves

I did one batch with garlic added but haven't sampled them yet. Going to give them a week for the flavors to mingle.

Just use vinegar, salt and garlic.

Just putting the peppers in vinegar un-processed makes a good seasoning. We use some peppered vinegar as gumbo seasoning
