I really think you are just used to the normal New Orleans supply. I know I have said this before but its true.
For whatever reason NOLA gets the dirtiest crawfish. I cannot stand the crawfish I get from NOLA suppliers.
When I get pond crawfish or spillway crawfish outside of NO they are a whole lot cleaner. Im not sure where the supply to NO is coming from but I think you are just seeing what those of us west of there are getting on a routine basis.

Cleanest crawfish I have ever had were the Galley and The Crab Trap...both of their suppliers are out of NOLA....FWIW.
