Agave Tamale Co. out of Lake Charles had a booth at the Freret St. Festival yesterday. They had the best tamales ever - even slightly better than the old Manuel's Hot Tamales. These were a bit larger and had more masa, but all the flavor. Instead of ground meat, they used shredded beef and they were just $8 a dozen. Try them if you get the chance.

BTW, I never heard of them before yesterday.

ETA: corrected company name

They have a website, but they're more expensive online. I'll probably just try to duplicate them at home until (hopefully) they become available locally. The guy said they are looking to expand distribution to the area.

They look very good. Looks like the fillings are moist. I find them to be dry, sometimes. Thanks for the site.

Yes, when I talked to the owner that was one thing he was adamant about - he wanted the masa to be moist and not caked on. To accomplish this, the tamales are steamed, not simmered in liquid as in some recipes.

I'm gonna swing by the restaurant next time I'm in LC. I've got a lot of friends in LC and they've never mentioned this place to me.

People simmer tamales?

What a terrible injustice.

good move with the shredded meat and more attention to the texture of the masa.

i like the old south la style swimming in the beef sauce and grease for sentimental reasons...but they lacking when compared to a well made sw or mexican style tamale. even the one you describe sounds like a nice improvement.

Hey- We will be at the Freret Market on May 8th, from Noon-5pm, spread the word. Agave Tamales coming back to New Orleans! Hopefully we will have a store in Lafayette, Baton Rouge, and New Orleans fairly soon. This is the plan!
