Have a 7 year old who has mentioned both and I have no idea about either one. Little help.

Personally, I like the guitars from GH better, but RB has better songs, overall.
Truthfully, you won't go wrong with either. And you might play more than your boy does.

Guitar Hero.
The field of play sucks in Rock Band. The "buffer time" is too short. You can only see like a measure ahead of time. Also the hammer-on notes are much more difficult to detect in Rock Band. They're very easy to pick out in GH. Another thing: when you have "star power" or whatever it's called in RB, you get this orange wavy line design which makes it difficult to see the notes, especially the orange ones. I'd rather have blue notes and see where they are than colored notes I can't find.
Plus the songs in GH are just more fun to play, they're more focused on the guitar shredding, and cater to songs with ridiculous solos that are a blast to play. Most of what I've played in RB has been alternative/emo bullshite.

Yet a third possibility?
Guitar Praise
Something tells me that you might want to go with one of your first two choices, however.

Strap on the guitar and play along with your favorite bands—tobyMac, Relient K, Flyleaf, Newsboys —and more. SHRED the riffs…THUMP the bass…BLAST that solid Christian Rock!

Buy Guitar Hero. I say this because if you have the Guitar Hero instruments you can pick up the game only version of Rock Band and play it with the Guitar Hero instruments. You can not play Guitar Hero with the Rock Band instruments.

Sounds like both will do. The ease of play is a big thing so am I right that GH is easier to play?

I have both and say Rock Band. Rock Band's song library >>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>> GH.

I like the drums and guitars better on Guitar Hero but like someone else already said the song lists seem better on Rock Band. Also something to think about; some of the background art in Guitar Hero may be crude for a 7yr old. It seems to be geared more towards teenagers +

Yeah, I think GH is easier to play. But still challenging enough in the higher difficulities that it will keep you and your kid entertained.
But don't feel bad when after a week he's whipping your arse and getting perfects in the hard or expert level. Those little kids are bad arse on that GH.

Won't feel bad at all. My 4 year old kicks my butt in Monster Jam Truck racing.

By a TON.
This.
Also, GH adds in notes that aren't there, making it less fun.
