What is a favorite food from your parish?

And what parish are you from?
I'm in East Baton Rouge and while we are not really known for anything in particular I think we do a few good items.
Boiled crawfish

A little high, try 60-65%. One of my good customers is the largest processor of LA crabs in the state and I know what I am saying.

Hell in Ouachita Parish we fry a ton of chickens from Lincoln Parish....I guess I got to move it off my list.

Although I've lived in EBRP for 30+ years, I am "from" Lafayette Parish. My favorite food from Lafayette is boudin.

One of my best old friends is an importer of Louisiana seafood into the Eastern Seaboard with Maryland being a large player. I'll split the baby with you and say 80.
Regardless, it is a lot and most people do not have a clue that ok...according to you...6.5 out of 10 crabs they eat are from Louisiana. They think they are eating local Chesepeake crabs.

Don't think I said anything about cooking ability. I was making a point about how the Chesepeake Bay crabs have been fished out.

I'll go with my home parish rather than do anything obvious from Orleans. Thinly fried catfish from bayou des allemands.

Well good choice. I'll jump on that band wagon any day.
Wild Louisiana catfish is amazing.
I guess parish wide is a hard way to think about it. Maybe regionally?

Not going to disagree. How about this crab stat, atleast 60% of Stone Crabs consumed in Florida come from LA? And we don't see them here? WTF, they are a true delicacy and we don't see them at all.
