There are different measures though, such as how long frozen, breaded before frozen, quality of shrimp, etc. Red Lobster ain't serving the good stuff.

Where do you eat? Seriously, I doubt that Per Se, Commander's, Spago, Daniel or Gautreau's serve frozen shrimp. Chili's, Outback and Red Lobster certainly do.

Gracias, Offshore. I highly doubt any of the restuarants I listed use such a product. I would as a consumer, but the standards those restuarants use I would highly doubt it.

I'd actually prefer it to be IQF if they aren't within 30 minutes drive of a fish market.

Might want to check on that, you might be surprised

IQF individually quick frozen, usually done very soon after catch in a process that very quickly freezes each piece of product, with items like shrimp this process usually provides a product better in quality than trying to ship highly pershiable seafood

agreed.

with proper freezing methods you don't lose much at all. Certianly more consistent than long transport times with fresh product.

If they have tuna or swordfish on their menu it's most assuredly frozen-as well as most shellfish I'd imagine.

It's the only way they can get it from the lines/traps to the table while preserving freshness.

with proper freezing methods you don't lose much at all. Certianly more consistent than long transport times with fresh product.
+1 IQF is better than fresh if"fresh" is more than 48 hours on ice IMHO.

Correct, but those are typically boats pretty far off-shore. If they don't have proper methods, might as well throw the catch overboard IMO. A lot of my customers are commercial fishermen and I guess I am just spoiled at what is available to me on an individual basis. A litlle bit of a seafood snob, fresh soft-shells, fresh shrimp and best of all fresh stone crabs on a regular basis.

Since the thread was started about Red Lobster, does this mean there is one in BR now? When I was in school in the 80s, we got lots of Red Lobster commercials on the networks, but didnt have one in town. The food on the commercials looked so good, that when I moved to Los Angeles I went right to the Red Lobster. Tremendous letdown.
