The doctor put me on a low carb diet.

I'm a carb-lover and being pregnant, my body is starting to store carbs instead of burning them off. So I'm cutting them out and I need some good ideas.
I just made a taco soup with:
chicken stock
black beans
rotel tomatoes
tiny bit of frozen corn (like TBSP)
some ground turkey
a pinch of taco seasoning
onions
chili pepper
cracked red pepper
It was super good, if I can continue to make stuff like that, these next couple of weeks will fly by, but I need all the help I can get.

Friend of mine went to low carb, recently,and has been using smashed cauliflower as a side for proteins instead of potatoes. You can mash it up after cooking and add whatever low carb accoutrements you desire. It can be "gassy", so I don't know if that bothers you in your state right now.
Sweet potatoes are a good sub for high carb foods as well. You can bake, fry or grill or roast them. I love sweet potato soup with andouille, myself.
There are probably a lot of low carb recipes out there if you google around.

Sweet potatoes aren't exactly low in carbs. I ate one last night thinking I was doing some good instead of eating rice...I should have had the rice.

I've been looking a lot. There are so many complicated ones- using goat, or things I've never heard of. I want something simple. I got desperate and went to the library and now I'm thumbing through the books.

Sweet potatoes are not "low carb" but they are low on the glycemic index, and way better for you than regular potatoes or rice. If your doctor told you only eat x amount of carbs per day, then yeah, there's probably a lot of low glycemic index type foods that are going to be out (brown rice, various grains, beans, etc.). You need to watch the tomato and onion intake as well if you are having to do really low carb.

He didn't give me a number (which is where I'm struggling), but he told me to cut back/out potatoes, rice, pasta, and bread. I can't tolerate much meat, it's been giving me gagging issues, that's where my issues come into play.

In your profile you mention loving candy. Have you given it up? Don't try to cut down on healthy carbs in order to justify eating candy or cookies. Stay strong.

Corn Maque Choux Recipe
You might already have a maque choux recipe, I just picked that example randomly. Stuffed merlitons also popped into my head but I have no idea if these dishes appeal to you. Have you tried pickles and ice cream, without the ice cream? Congrats on BNTW Jr.

I started cutting back at the beginning of this pregnancy so I was going good but the doctor told me NO MORE. So as of the doctor appt, YEP, i have given it up cold turkey.
