Is this fish really good or something? I had seen a recipe in a magazine this weekend and thought about cooking some, but when I got to Whole Foods and saw that it was $25/pound, I gave up on that idea.
I could have gotten some dry aged prime steak for alot less than that.

they prob have it at other places a little cheaper. that fish practically melts in your mouth if you cook it right.

Great fish, but halibut is equal in texture and flavor, and it's much more environmentally safe.

Saw a recipe in a magazine, decided to try it. It was really good, but it sure in the hell wasn't worth the $20 to $25 per pound it cost.

Is being overfished. Don't eat it, and I try to stay away from restaurants that offer it on the menu.

The Chilean Sea Bass at Seagar's in Destin was the best fish I've ever eaten. It was $35 or so.

My thinking is that the Patagonian toothfish will probably be extinct before I am, so eat I it while I can. Steaming is my favorite method of cooking and it has a sort of buttery flavor about it...almost a richness like crabmeat. It's a very ugly looking fish.

greatest marketing decision (start marketing it as "chilean sea bass" in the history of the seafood industry?

This is the winner, people who pay for tilapia are out right idiots, damn thing doesn't even taste good.

this sea bass lives at very deep depths and lives for a very long time. Because of that its rate of procreation is very low. When it first hit the makret prices were considerably lower. You over-fish a product that can't naturally keep up with demand, and the price will shoot up--it's been kind of amusing to watch.

Not to mention the tilapia you get in restaurants was probably raised in the sewage ponds of China.
