I'll be smoking a 16 lb brisket later this evening for dinner tomorrow. I made tallow with the trimmings from prepping. Was thinking of using some during the cook. When do you use it? Spritzing? Wrapping? How'd it come out?

Thanks in advance

I usually line the inside of my wrapping paper with before wrapping. Not sure if it makes a difference or not, but I doubt it could be hurting anything either.

I use it every time. Lately I’ve smoked unwrapped the whole time. When finished I wrap in foil with tallow and let rest for several hours

I inject the flat with tallow.

Word to the wise:
If you do this be prepared for a huge mess. shite flies everywhere. Last time I did it I laid the brisket in a big pan and covered with Reynolds wrap. Helped a bunch.

I have no idea how you could possibly make a huge mess injecting a brisket with tallow.

Inject it with tallow and then line the butcher paper with it when you wrap. Makes an enormous difference.

I use it when wrapping. I cover the paper and the brisket will tallow. I find it mellows out the bark.

Take my word for it. There will be a huge mess if you don't cover with reynolds wrap.
