Lent meals for large group, ideas?

I have an obligation to provide about 75 servings of dinner for a few times the next few weeks, was planning Jambalaya or pastalaya. It came to my attention that one of the days was a Friday and I have a crowd of quite a few Catholics coming. Any ideas of what to prepare for a large group. Limited on areas to keep things warm. Can do fried fish, etc, but may not be able to keep hot and fresh as I would like.

You could do a big seafood pasta. Crawfish and shrimp. Just no sausage

Huge pot of seafood gumbo, crawfish chowder, shrimp stew or corn and shrimp soup.

you can do a big spaghetti with homeade sauce, and use big chunks of portobello mushrooms as the "meat"

8 gallons of etouffee
20# crawfish (or shrimp for cost savings)
Light roux made with 2lb butter and 1.5lb flour
10# onion or Guidry's mix
5 green onion bunches
parsley, Cajun seasoning, etc.
about 2.5 gallons water
-Serve with 12 pounds of rice
shrimp pasta
20# shrimp
15# pasta (fettucine, rotini, cavatappi, etc.)
- find a fettucine/cream sauce recipe and multiply it by the amount of pasta it calls for
crawfish monica
20# crawfish or shrimp
15# rotini
15# onion or Guidry's
5 green onion bunches
3 parsley bunches
3 pounds butter
30 cups heavy cream
2 jars parmesan cheese
-melt butter, saute veggies, add cream and parmesan, add crawfish
-cook pasta and mix with sauce
Another option that may work if you have ovens is a seafood lasagna.

Fried fish as long as its not soggy is almost equally as good at room temp as it is straight from the grease.

we do a 'meatless' spaghetti for San Giuseppe/St Joseph on his feast day at church. Red sauce with no meat and we use boiled eggs instead of mushrooms. I'll admit, it's not the best spaghetti, but I've been doing this with my family every year since I was born so it's a tradition and I look forward to it. There's also plenty of casseroles with cabbage, eggplant, etc. but no meat
