Hogs for a Cause judging information

This is my team's first year in Hogs. What should we expect the judges to be looking for? We have only cooked 3-2-1 ribs in the backyard. Do we have any chance of doing well?

The judging is the only issue I have with this event. People pay to be judges and they only get a sample of 4 teams I believe. So it's not consistent, by any means.

I know for a fact that the same sauce was once turned in for two teams one got top 3, one bottom 3. My advice, do it to have fun

just have a great time, take in the experience, and present your best item cooked. The end goal is raising money for pediatric cancer

You never know. I was on a team that did the exact same thing. We got a top 10 overall the first go. We had several top places over the years. Our best was a 2nd place in Porkpourri. However, I think one of the contributing factors was that we were also top 5 in fundraising.

I was reading that the most important question to ask in a BBQ competition is whether the judges pick up the rib to eat or use a plastic knife and fork. But I guess this one doesn't matter. It's all luck and money.

I’ve only gone twice, and never competed, but none of the ribs that I tried were fall off the bone. If I go to a bbq place that advertises fotb ribs I’d never buy them. They’re overcooked.

Yes, for sanctioned events, that is the standard. We also did sanctioned events, so that was our goal also.

That would be your best bet also. Sorry, I just meant that the judges aren't necessarily certified judges.

Don't set out to do well, you will be disappointed. Have fun and just do your thing. Learn to plate it well.

You want stick to the rib bones and color.

The judges are not judging on taste for the most part.

The overseer judges tell them what to look for and then point out how they should be judging. Basically your ribs are being judged by someone walking around standing over everyone's shoulder telling them how to score it.

I judged one year, kind of accurate but no one was telling me how to vote.

I don't understand any other way to eat ribs than to pick them up.

Cutting them with a knife and fork sounds like some kinda yankee thing.

LOL, truth! But that's how they do it in most Louisiana and Texas BBQ competitions.

There are usually a few entries put on the judges table with several judges at the table. Each entry is passed around the table for each judge to sample each entry. You use a new fork and knife for each entry tasting. So I think it is more of a sanitary precaution so you're not picking up and eating a rib that someone else has already taken a bite out of.
