And Kevin Smith even pronounces boudin right. 
ETA - also, I'm freaking craving some boudin out here on the West Coast. I've been craving it for like 2 years but keep forgetting to search for a place that will ship it to me out here. Now my stomach is growling after seeing that menu zoomed in on. It looks so good!

I'm about to place an order now before I continue to procrastinate or forget. It's been years since I've had some Billy's, so I can't wait. I think I might try one of their king cakes. Never had one from there, but since I'm ordering the boudin and shipping is going to cost quite a bit, might as well go all in.
