Barbecue Knives and Leather Roll

I'm looking for advice on a Christmas gift. The recipient does barbecue competitions (Texas style) but doesn't have a nice set of their own knives. I thought I could buy one really decent knife and maybe a personalized leather knife roll to get them started.
I would appreciate thoughts and suggestions? I would like to keep it under $300

I've owned just about every type of knife from Henkel to Shun, Global, Dexter, a Cutco, and a Japanese carbon steel I'm actually afraid to use in case of damage.
Over the last year I've been replacing pieces with mostly Dalstrong. It's all over Youtube and Amazon so I was skeptical, but they are surprisingly nice and a great value I find.
I would go with an 8" chef knife. I own the Shun and the Dalstrong below, you can't go wrong with either. The Dalstrong is heavier, which I like. My knife roll is also linked. You'll come in well below $300, or you could also pick up a nice pair of shears, a Dexter slicer, or Dexter filet.

Are you looking for a knife for prep work or for slicing the finished product?
I don't do competitions, but when I got comfortable enough with my smoker to start doing briskets fairly regularly my wife got me this Victorinox Fibrox 12 inch. I love it. Slices through warm brisket like butter.

I was initially thinking a boning knife, something to trim meats with.

For trimming this is my recommendation
Victorinox 6" Curved Boning
Inexpensive, highly regarded and leaves plenty of cash left over to add a 12" brisket slicer or an 8" chef knife.

I am an Olivia Tied fan, but started using Messermeister a few years ago. I recently purchased her chef knife with the middle finger inscribed into the blade.

The fact that, being a bbq competitor, he'd be cutting meat more than veg, I would opt for German steel/Wusthof. I'd get him an 8" forged chef's knife, the roll, and a Wusthof boning knife, assuming you can go a touch over 3 hundo
