I am interested in starting these books but see there are a few different ways to start. Any suggestions?

Most people's answer will be the Thrawn trilogy. It's constantly ranked as the top books in the Star Wars universe. I enjoyed the Darth Bane trilogy. If you want to learn more about some of the characters from the movies, then there are books for that. The Correlian Trilogy gives you a lot more insight into Han Solo's life. It really just depends what you are looking for in the Star Wars universe.
A lot of the books that aren't part of specific trilogies can be read on their own. Some of them mention people or places from other books, but don't usually need the other book to be read to understand.

I read the first Thrawn book a few months ago and I really liked it. I plan on finishing it up eventually. I had the same question before and like the previous poster said, that's going to be the most popular suggestion.

Thrawn Trilogy was outstanding.
I really enjoyed The New Jedi Order books, which cover an invasion from outside the galaxy. Its multi-book story arc though, something like 18 books.
Its a damn shame that Disney basically wiped out the Star Wars extended universe when they bought the property.

I’d start with this.
Then decide where you want to jump in, it’s a big universe.

Canon: the Thrawn trilogy.
Non-canon: X-wing series.
The x-wing series is my personal favorite. Follows Wedges Antilles in the post Endor universe as he later recreates Rogue Squadron, captures Corusant, forms a new commando first / pilot second squadron, etc. It's about 12 books long now.
Introduces Corran Horn as a main character through about 2/3 of the series. He has jedi heritage.

Going to piggyback off of this - are there any great star wars audiobooks if we prefer that medium?

The OG Thrawn Trilogy is the best. I just finished a couple books of the Yuuzhan Vong and it was OK

Thrawn. I have enjoyed the Republic Commando series as well.
