It really had zero to do with anything other than a lessor board to get blasted for not knowing how to post pics

It's about a 2 day thing for me when I do it, but I only use crawfish I boil myself, so day 1 is do a boil, pick the tail meat, save as much fat as I can and clean the heads that I need for stuffing. Then I use some of the discarded heads to make a bit of stock to use in the gravy.

Day 2 is cut up all the seasonings for the stuffing and gravy, make the stuffing, fill the heads and roll them in flour to go on a baking sheet in the oven to lightly brown and firm up as the gravy is getting started. Let the gravy cook a good bit, then add the heads to finish it off.

True, homemade crawfish bisque is a labor of love and so damn good when done right. The last time I made bisque I had a couple hundred heads and over 3 gallons of gravy--------it freezes well for later consumption.
