To go over sausage and peppers?

When I make a hoagie with Italian sausage, peppers and onions, I mix up some olive oil, balsamic vinegar and Italian seasonings and let it sit a bit so the dried herbs will get moist. I brush on the cut sides of the bread before loading it.

This, and put a spoonful of this in it (There are various brands of it, which I would think are interchangeable. I don't even know this one, it was just an easy pic I found online. It seems like an easy to find product regardless):

I kinda wanted to stay away from a red sauce. Wife isn’t crazy about that. Some type of cheese sauce maybe?

When I make sausage and peppers for a poboy, I put yellow mustard on it. It might be a death row meal for me.

Marsala wine sauce. After cooking sausages, Deglaze the pan with the wine, scraping off any bits from the bottom of the pan. Add butter and heavy cream. Bring to boil and cook a few minutes. Add sausage and peppers to pan.

Try the original chick-fil-a sauce in grocery stores.
