What is the name of the cake that is usually served in New Orleans?

I'm originally from New Orleans and somebody asked me a question that I'm having trouble remembering the name. A lady asked me what the cake is called and how to make it. I knew immediately what she was talking about but for the life of me I can't remember the name of the cake. The last time that I had some of the unknown cake was over twenty years ago when I worked in Avondale. Here are some of the facts of the unknown cake that I remember when I saw my grandmother make one. The cake is made when you have about five different kinds of cake that are baked. The cakes are pulled into pieces and the pieces that are pulled are usually put in a punch bowl. You take a spoon and mix the pieces together. The last thing that I remember was some kind of liquid was poured over the cake pieces in the punch bowl. There are other ingredients used in making the cake but I can't remember them at all. I also remember that the cake was delicious. Does anyone remember the name of the cake that I'm talking about?

Russian Cake is the answer. You can really use any leftover cakes, but Haydel's and Randazzo's use Devil's Food cake, almond cake, and white / gold cake, raspberry jam, and rum. Bind the cake parts with the jam, soak the combination in rum, then place it in a mold or compress for up to four days. Remove from compress and top with buttercream icing.

Just like you can use whichever leftover cakes, you can use wine instead of rum and fruit syrup instead of jam.

Haydel's looks more like what I think of as a Russian Cake.

Russian cake is one of the best desserts you can find, when you can find it.

They sometimes have slices at Dorignac’s and they do a good classic version of it.

Another name for Russian Cake is Creole Trifle. I think more people know of it as Russian Cake, though.

I don't eat many sweets anymore and cake was never my favorite, but I had this once, and wow! Also had a flourless chocolate cake slice at John Folse's restaurant by the Sunshine bridge and it was insanely decadent. The lack of flour made the cake the consistency of the inside of a chocolate truffle.
