Anyone portion it out and vacuum seal it for freezing? How did it defrost and cook? Thanks.

It's already been frozen once so probably not great to refreeze. Most places seel frozen packages of individual portionsvfor salmon, tuna, cod, mahi, etc.

A little more on the dry side when reheating. I'd advise against it. Even though it's 3 lbs of the stuff.

Do it all the time. It’s pretty good.

I bet if you ask, they would bring you out a frozen one. There is no way they don't get them already frozen in the package.

Do it all the time. We do them in tacos or some kind of Asian glaze from the freezer to help mask the “dryness”

I usually just use it thawed from the store when I buy it but sometimes I'll freeze a filet or two to cold smoke at a later date and that works out fine for me.
I will dry brine it first to remove some of the moisture and add some flavor before cold smoking it. When done, I'll slice it razor thin and eat it with crackers or add some chopped up in Philly Cream Cheese with some fresh herbs from the garden added in to spread on a bagel.

Get the one that’s already vacuum sealed and frozen

This. I always get the pack that is individually frozen and says "farmed raised in Norway". I never buy any fish that comes from farm raising in Asia. They raise them in large poop tanks. Same with shrimp.

I do it all the time for the wife. We cut it up in single portion sizes, add different marinades she likes, then vacuum seal.
Then you can take the frozen bag out of the freezer and straight in the sous vide, cook it, and it's ready to eat.

Was looking at some last night and noticed
I am not into thawing and refreezing.
How do you plan on cooking?

Yes I do it all the time. It’s fine but definitely doesn’t have the same texture as when you cook it immediately
