Workout 5:30-6:30.
Caffeine water until 11:30
Eat lunch which is usually meat, rice, veggie sometimes fast food
Caffeine water until 2:30
Dragging arse 1:30-4
Eat dinner at 5:30
Energy levels fine until 9:00 bed time
Thinking it’s some low sugar issues which is why I used to pass out after 3:00 workouts
What should I tweak??

Glucometers are cheap, buy one and measure your glucose and remove that question from your mind altogether. (Because it's probably not low sugar, but a glucometer isn't a bad thing to have around, just for these situations when you have questions about "What is my blood sugar?" and you can prick your finger and know in seconds)
But ....I don't think it's abnormal for a human to feel sleepy at that time....I think it's absolutely normal, and the only tweak should be you learning to power-nap for 15-20 in the afternoon.

Add an afternoon snack/small meal? Fruit?

Are you having trouble keeping your daily calories at your goal without IF?

So you eat lunch, I'm guessing around Noon, and then you eat dinner at 5:30. And those are the only meals you have in your day. I'm not saying 2 meals a day is bad, or even 1 meal a day is bad. What should be said is that everyone is different. You need to find what works for you.
Personally, I think you are relying too much on caffeine to supply what your body should be producing naturally.
I'm all for IF, but during the 7-8 hours I'm eating, I'm putting at least 2000 kcals into my system. It sounds to me like you aren't putting enough calories into your body.

electrolytes or mineral salt will help.
Perfect Amino is good to take while fasting and working out.

I mean, I dont see anything crazy in your day. I know it wouldnt be optimal for most folks but I just do breakfast and lunch, skip dinner. Ive had no issue with afternoon fatigue
