Yeah, this is where I'm at as well. I've been looking forward to DD2 since before the project was even officially announced. I put more hours into the OG Dragon's Dogma that any other single game in my life. Had multiple PSN accounts just so I could have a full group of only my own pawns every time I played. Not sure I'll do that again though since each account requires a PSN fee to access online features, but maybe I will if I like it enough.
I have never loved combat in any other game more than the combat system in DD. The story was niche and strange, but still good. But the action is where it excels. It's not quite at the difficulty of souls/Elden games, but that's my preference because the souls type games are for a crowd far more masochistic than I.
I'm not saying that to piss off souls fans because I definitely think those games are absolutely bad arse, but it's just not my style with the incredible progressive difficulty. The OG DD started off difficult, and then the difficulty greatly ramped up once you hit a certain point, and then again ramped up when the Dark Arisen DLC dropped... but with time and patience and a few built-in game-breaking tricks, it was very manageable and fun even for me. I think I took Death down in BBI 200+ times when I finally lost count.
I only just hit chapter 10 on Rebirth, and I'm really taking my time doing everything possible on my first playthrough. At first I was somewhat underwhelmed with the overall game and overwhelmed by the scale of the world, but that changed as soon as I reached Gongaga, and so far the Cosmo Canyon region is blowing me away. I'm motivated by a determination to acquire the Gilgamesh summon on my first playthrough. I guess on the bright side, taking my time on Rebirth will allow some TouTubers to figure out and post a lot of DD2 tricks and hints before I actually dive in.

Once you get into Chapters 2 and 3 the game starts to feel a lot more like a Soulslike or at least like Stranger in Paradise where the fodder enemies are easier but the bosses are massive difficulty spikes that don't play by the same rules as the player character, and I'm at least 5 levels above the recommended level for the missions.
