Piggy Barnes. Around late 1940s. He became incensed once at another 300 + pound player named Apple Saunders and threw him out a second story window of the Pentagon when those were the football dorms. There was also a reported incident about when he was on the US wrestling team that his Russian opponent forfeited his match when he saw what Barnes did to his previous opponent. The emphasis is on psychotic.

Not reading through multiple pages...
Art Cantrell is the correct answer.
Art Cantrell is the correct answer.

I'll go with the first name that came to mind- Art Cantrelle!

Art Cantrelle!
The correct and only answer. Doesn't matter that he played on the offense.

Rusty Domingue at LB dominated Nebraska when they were No. 1 in the country. He and Blake Whitlatch.
Then Domangue stabbed the guy afterward, but he always had a reputation of being crazy.
Then found religion and became a preacher

Albert Bell, even though he didn’t really play football, he would chewed someone’s arse on the football field

Shawn Jordan went on to fight in UFC and Bellator.
Can't believe it took this long to mention him. Shawn likely wrecks anyone on the list off the field. Had 15 KOs as a professional fighter and had 10 fights at heavyweight in the UFC with 5 KOs in UFC. Knocked out guys that fought for UFC Championships. KO'd Pat Berry, Jared Cannonier, and DERRICK LEWIS. As bad as Art Cantrelle was he would get embarrassed prime vs prime.
ETA: I see OP said defense but a lot of people mentioned offensive guys. I'd also give Jarvis Landry consideration for baddest pound for pound.
