It depends. If I am just looking to get across how cool of a spectacle movies can be, then I'm showing them:

The Empire Strikes Back
Saving Private Ryan
The Good, the Bad, and the Ugly

On the other hand, if I'm trying to get them to see film as art, then I'm showing them:

2001: A Space Odyssey
Apocalypse Now
The Godfather

nah, OP was talking about getting them started and into cinema.

Film as Art is a later step. Pushing artsy movies too early will bore and turn them off.

My 3, to a newcomer (as stated maybe your child):
1) Raiders of the Lost Ark (The Mummy is a good alternative)
2) Star Wars (original, in original/despecialized format)- just a rollicking good time
3) The Princess Bride- plenty of adventure, and it's also funny as hell. I would love to watch that with someone who's never seen it.
