I watched a YouTube video today about each State's "signature" food, and Arkansas was biscuits with chocolate gravy. Now I have never in my life heard of chocolate gravy, so is this just like biscuits with chocolate syrup poured on it? I need an Arkansas expert to school me on this.

Definitely not just chocolate syrup, it's flour based with real cocoa, milk, and butter mixed in.

Imagine a semi-sweet cocoa based thick gravy poured over some good biscuits that have been split in two and have pads of butter melted in the middle, then a slight dash of salt on top.

It's one of the best salty/sweet combos out there, although I had no idea it's our "signature food" in Arkansas

Arkansas doesn't really have a signature food but they are well known for cheese dip.

If you are ever in the state, go to Stoby's in either Conway or Russellville. They serve some pretty good breakfast burritos and different types of cheese dip.

Also get the biscuits and gravy, you won't regret it.

I think I watched the same one and find it sacrilege that a hamburger with onions beat out gumbo and some of the other offerings.

To answer your question though it's a common rural deep south dish it's gravy but with cocoa and sugar added (not overly sweet). It has a really good profile as you get a good combination of flavors without it being overly sweet or savory.
