Possibly both. Depends on how much liquid you have and how much you want to reduce / thicken your beans.

Oven at 300° with lid on for 3 hours. Remove, take off lid, and reduce on stove top until it gets to the consistency you like.

I soak overnight, cook uncovered. Sometimes I need to add water, but usually I have it down pretty good without the lid. Most of the time I don't need to add any liquid.
