Looking for moderately priced restaurant options late October.
Going there for a conference
Already spending a bunch on 4 days prior to conference in Zion/Bryce, nice fountain view room at Bellagio, etc etc.
Both of us enjoy simpler when it comes to dining.
We will go higher end one of our nights so interested in thoughts there as well.

For casual breakfast through brunch try Eataly in Park MGM. It’s connected to the Bellagio with a tram. Some fantastic sandwiches and pastries.
Secret Pizza is in the Cosmopolitan also on the same tram.
You really won’t have trouble eating casually in Vegas. Get a MGM players card and use it when you dine or buy anything at their many properties. Dining is just like gaming play, it sets you up for comps and freebies.

If you are staying at the Bellagio, one of my favorite evenings out is to have cocktails in the piano bar, especially if Mr Pheonix is playing, then have dinner at Spago. If the weather is nice, sit out on the terrace overlooking the fountain.

Not sure about Vegas. But out near Bryce Canyon, I highly recommend a sunset/evening dinner at Stone Hearth Grille in Tropic. Great view.

The pricing on Vegas Strip has recently been insane. I would rent a car and go off strip. You can get more value.

This is the correct answer. I had a great German meal recently at the Hofbrauhaus, and if you like Asian food at all, there are lots of great options in Chinatown, which is very friendly on the wallet. I can gorge myself for instance at Izaka-Go for under $100, which is one of my favorite current spots, or pay five times as much for the same meal on the strip. Can't recommend renting a car however which can become a liability to park and especially a poor idea if you're drinking at all. Lyft/Uber is incredibly convenient and pays for itself when leaving the strip to eat, and I've also made use of a bus pass.
