Grilled Quesadillas

Already posted on the FBD, but did quesadillas completely on the grill on a whim.


Started by throwing some serrano peppers on the induction cook top. It didn't work well.


I took it out to the grill...


Cooked some chicken.


Loaded up the quesadilla before cooking on the grill.


Served with a beer sour cream, and hatch chili salsa.


Finished product - everything was cooked on the grill after the induction cooktop failure...


This was great. The grilled chicken, onions, and serrano peppers kicked it up a notch. The tough part is making sure you don't burn the quesadillas over direct flame. I cooked them over indirect heat until the cheese melted and then moved to direct heat for a bit of char.

You tried to cook the peppers on the induction with no pan? Just the peppers sitting on top of the burner?

Looks great! Homemade quesadilla is so, so good. Would eat one every day, if I could!

I'm going to try it but will use grated block cheese instead of the bag cheese.
