I found a previous video ( LINK) of the UL crawfish boil and it said that they serve "10 tons" of crawfish. I actually think they meant 10,000 pounds, but even then, if you only have one crawfish cooking trailer, that would take over 10 hours to cook if you are doing 1,000 lb in an hour.

The only way that soaking would work for cooking and serving crawfish in a 2-3 hour timeframe is if you have 3 or more trailers.

The 2016 UL Crawfish Boil video shows just 1 trailer.


So all they are likely doing is dropping their crawfish, returning to a boil, emptying crawfish from pots and dusting, which doesn't take much time.

Ok I called the guy here locally that does them for our event. What I thought was his “big” trailer isn’t. His 16’ rig can boil 2500lbs per hour. That cuts your boiling time down to 4 hours.

But… you start boiling before the event starts so the crawfish is ready at the start of the event. So 10,000 lbs of crawfish can successfully be prepared and served during a 3 hour event.

So again…. Dusting is lazy.

I don't get why you're so hellbent on arguing that dusting is the only way to cater a large event. It's simply untrue. You say I like to argue, but you're the one stuck on only one method possibly being acceptable, even in the face of loads of evidence to the contrary, all while being smug in your responses.

This is the last comment I'm going to post in this thread.

You guys have posted how you feel that it's possible to do it with xyz setup, but you have zero idea of the setup that they were using. It's a fruitless argument because the facts aren't all there. I was just giving a viable reason why they were probably dusting. I'm really done now

ULL should really care enough about their folks to invest in properly cooked crawfish.

Why not just give the students a gift card to the nearest Chinese buffet, they got them good ones in there.
