Brisket rest time

How long is too long for resting a brisket? I pulled it at 12:30 and let it rest on the counter for an hour and then put it in the ice chest and it’s been in there for 4 and 1/2 hours. Can I go a couple more hours?

Yeah you should be fine.. just be sure it doesn’t stay below 145 or so for too long. You can always throw it in the oven wrapped with some tallow at 150

Longest I've gone is 6 and it was a beautiful thing.

I feel like I could've gone 8 but that's not a typical scenario.

Not sure if there is a cut and dried "time". I have done several brisket and they all "came in" at different times on the grill. I just put them in an ice chest until it's time to eat and go with it and so far, all good.

If you are looking for a minimum length of time, I would say 30 minutes????

Thanks everyone for the input! I ended up resting it for a total of 7 hours and it really turned out great. Wife said “best brisket I’ve ever had” for whatever that’s worth! Lol

I use the oven because I can set mine on 150. I leave it wrapped and put a pan of water in with it. I wouldn’t rest for less than an hour and have gone up to 12 hours with good results. I’ve found it is usually better the longer it rests within this time frame.

I don't think it's possible to let it rest too long.

My preference is to cook early in the morning, finish at night, rest in the oven on the "keep warm" setting overnight and eat the next day.

I've held brisket in a cambro at 150 for over 10 hours and it is perfectly fine.
I just think you can't let it get below that danger zone magic number.

Cambro
This is not the exact one but it's just like it. It's not mine it's borrowed and it's awesome. It's perfect for big things like Thanksgiving and Christmas when oven space is limited and you want to serve everything hot.

Not an expert on the discussion but the whole 40-140 danger zone. I keep my resting brisket, pork, etc above 140 until it's ready to serve.
I am sure people will have their own opinion on the matter but thats what I do.

Some brisket experts say many of us do not let it rest long enough and should be in the 4-6 hour range as long as you don't go below 140-145 I believe.
