Smokers?

I'm thinking about getting a smoker. What kind do ya'll have? I know they sell those water smokers at Home Depot, but I don't think that's the route I want to go. Should the smoker be a wood smoker? How do you set one up? Thanks.

This is mine. The firebox is on the side and it doubles as a grill.

Wood or charcoal definitely! Academy has some nice smokers. I was in a hurry and that is where I purchased mine. I have the Longhorn Delux and it was about $800! it just depends on how much money you want to spend, but I reccomend an off set fire box. Keep in mind the thicker the steel the less chance of heat variation. The key to good BBQ is consistent heat along with flavor.

To set one up! Spray entire inside with pam or coat with crisco built a hot fire. After a period of time mist with water. Let get hot again then mist. The water process is used for cleaning as well. A complete description can be found on the net at pigroast.com! I hope this helps.

Thanks. So an offset one? I'm good at grilling and slow cooking on my gas grill, but I've been wanting to get into slow cooking smokers. I'll check out that website too.

The Bradley smoker is actually quite a nice unit for the price. The wood pellets it uses can be expensive, but deals can be found with a little looking.

Seriously if you want to get the best smoker and not spend over 1500 then either get a Green Egg or get a Webber Smoking Mountain. There are no two smokers that are better out there unless you go professional. I own a WSM and I love it.. The temper control is the best I have ever experienced in a smoker. Basically its a set it and forget it smoker. Just put coals in with wood using whats called the minion method and you do not have to do really anything for up to 16 hours of constant temp.

I have Brinkman. It's cheap, and a bit cumbersome. The grilling surface is small. It does smoke nicely, however. I want an offset so I can cold smoke.

Totally sold on the BigGreenEgg.
bought one 5 years ago and still love.
It is very versatile as well being equally adept at smoking, grilling or making BBQ.
Not as big as some smokers but they are decent sized so obviously keep that in mind. I smoke a turkey every year for Thanksgiving. Comes out fantastic.

Try the primo oval if you are considering ceramic. I think the quality is better and less expensive than a green egg. They are manufactured in the Atlanta area!

Both ceramics are pretty good.

I have a Brinkman...cheap, but smokes very well....
I would recommed you start out with that...will give you a good feel for the process, ahd whether you think the ordeal is worth the trouble.....if you like it, then you can upgrade to something more expensive....

Hmm I had a brinkman and it was a pain in the arse for temp control. After that I wish I would have gone straight to the WSM. Both have the same concept but the brinkman let out a lot of smoke through cracks. This let temp out too which caused alot of temp controlling which isnt fun. Now the water pan for the brinkman is very good and many WSM owners use it.

I want to smoke a small turkey in my Brinkman--any pitfalls to avoid?
