Best Caribbean Options

Looking to plan an all-inclusive trip to the Caribbean in January. Just me and the mrs with no kids in tow.
What would some of the top options be?

Some islands are a bitch to get to, depending on where you’re flying out of. Does that matter to you?
From Houston, we typically get quick’ish flight schedules to Grand Cayman, Aruba, and the Bahamas. Those would be my recommendations based on your preferences of high end with good food.
If trip time (i.e. potential hassle to get there) and $$ is not a major concern, I suggest St. John, the British Virgin Islands, Antigua, or Barbados, in that order.
I haven’t been to St. Lucia but that would probably fit too.

Can't really vouch for many outside of the Excellence collection. We've been to Playa Mujeres, Riviera Cancun, and El Carmen in the DR. I've also been to Sandals Royal Bahamian and Secrets Capri (which is something else now in Mexico). Excellence for the money is really hard to beat. I will caution you that the food is not 5 star quality so if that's more important, then look elsewhere. But everything else is top of the line. The rooms were fantastic and the service is awesome. Stay in the Excellence Club (or preferred club at Secrets). It's worth it at Excellence. You get better room options (in terms of location at the resort) and you get a couple of lounges and a restaurant that is strictly for EC guests. You also get a special section on the beach that is less crowded.
All of the resorts were relatively easy to get to. El Carmen was about 40 minutes or so from the Punta Cana airport. Secrets Cap Cana is like 15-20 mins away. The Mexico resorts are about the same as El Carmen, maybe a little less. The resort provides transportation at a discounted rate (or free if you catch the dates right) in a Tahoe/Yukon and it's a private transfer. It's all top notch. I wanted to go to an Iberostar in Punta Cana but just couldn't pry myself from Excellence. I've had 3 great experiences with them so far that it was hard to try something different.

Dominican Republic has the best variety of resorts to choose from.
A larger island (PR, DR, Jamaica) will offer more variety of activities, etc.

Providenciales, Turks and Caicos. Some really good restaurants and a fantastic beach. Tons of resorts to choose from.

The Four Seasons in Nevus was incredible. The grounds are beautiful and the food and service is top notch.
The view of the night time sky, the Milky Way galaxy, with no light pollution was a real treat.
We had a fantastic meal at L’hermitage an old sugar plantation.

I think the destinations in the Caribbean that do all inclusive the best are the Mayan Riviera near Cancun and nice Jamaican resorts. TripAdvisor has been a good resource for me. I would start there.

Appreciate all of the input. We ended up booking The Sanctuary Cap Cana. Will report back after the trip.
