I'm an originalist, so I can agree with wanting to see her comic origin played out on-screen.
The problem is, we're talking about two different She-Hulks.
The original one is really just a female Hulk.
Fast-forward almost a decade and her original comic ended but a new one began. This one went away from the normal serious fare for a more light-hearted and comedic take.
This tv show is the latter She-Hulk (so "Sensational" instead of "Savage"). Doing an origin story for the lighter version would work with the mob hit, but changing it up to be a bit lighter (as well as working in Bruce going back off-planet) works just as well.
Don't get me wrong, I thought it was phoned-in bullshite writing but considering the overall tone of the show it's not something I would list as a top peeve (that's still the CGI).

Actually I think this is a GREAT reason. I don’t GAF how she got her powers and I hate it when origin stories drag needlessly. A mob hit isn’t that interesting anyway and yes, it’s a snarky fast-paced show with short episodes that does need to jump right in to the story. Blood transfusion or accidental blood droplets from Hulk, either way it was the Hulk’s blood.

So you don’t actually care if it’s a mob hit then? You’re ok with changing the source material after all, but you just need it to be a transfusion? Why does it matter so much how the blood gets done?

If it didn't matter, the writers would have found a faster way to have Bruce give her the transfusion to save her life.
Here, I'll fix it. Instead of him wearing the never before heard of bullshite device on his wrist to keep him from changing into Hulk, they get into the same car accident and you see her injured in the accident, he Hulks out but she's unresponsive at the scene and you see him pick her up and take off. Cut to the hospital with her waking up and she looks fine. He then explains that she was dying and he had to quickly make the decision to give her a transfusion and save her life but infect her with the Hulk blood, or let her die. Easy peasy. But doing this keeps him the hero, which is no good here. Funny part is, they could have gone this route and STILL made it all feminist if they wanted, because they could then have her openly blaming him for her situation. But, they preferred to have her get Hulk juice via her own heroic self sacrifice and still allow her to bitch at him for it.
Asking why it matters is like asking why it matters there are now beardless black female dwarves in Tolkien, etc. If it didn't matter at all, creators would stop changing things and keep the spirit of the source material as is. The fact that they DO keep altering things tells you how much it really does matter.

To me it makes sense that Banner creates a device to make himself human again after being stuck in Dr Hulk or Professor Hulk form for so long. But it happens anyways because of the car accident and his gamma blood transforming her. I just don't like the direction they're going with Emil Blonsky/Abomination character, but we'll see where it goes or what happens.

They sped through Spider-Man's origin in the MCU and pulled it off nicely. None of the MCU films give the backstory of how he got his powers. It's briefly mentioned. They could have done the same for She-Hulk if they got creative.

It can't be that easy to "make" a hulk. I think that's what they were trying to avoid.
